How much should I eat on a bike ride?
It depends on how hard you are riding! But the general rule is that for any ride over 90 minutes (or shorter, if more intense) you should aim for 60 - 100g of carbs per hour.
What should I eat before a ride?

You should have your big meal 3 hours before a ride and a snack (e.g banana or energy bar) 1 hour before. You should never ride fasted even if training early in the morning.
Should I wear underwear under bib shorts?

Absolutely not! The chamois in bib shorts is specifically designed to be worn against the skin to protect you from chaffing. Underwear will only make saddle sores worse.
